  • Elisa Vander Hout -

Founder and Director of Greenwood Baths

For over twenty years, Elisa Vander Hout has been farming biodynamically alongside her husband, Michael Schmidt, at the renowned Glencolton Farms. Deeply rooted in the rhythms of the land, Elisa’s lifelong passion for wellness and nutrition has always been intertwined with her love of growing food in harmony with nature. Her connection to the cycles of life, nourishment, and renewal naturally evolved into her next great vision—the creation of Greenwood Baths.

As the Founder and Director, Elisa envisioned Greenwood Baths as an extension of the farm’s philosophy—a space where the same respect and reverence for the natural world could be experienced through water, rest, and ritual. Nestled within the serene landscape of Glencolton Farms, the baths invite guests to reconnect with themselves and the elements through cold plunges, sauna, and a variety of holistic modalities that restore balance to both body and soul.

Elisa’s journey in creating Greenwood Baths reflects her deep belief that wellness begins with how we relate to the world around us—the food we grow, the water we immerse in, and the breath we take. Through this sanctuary of nature and nourishment, she hopes to inspire others to discover their own path toward vitality, presence, and wholeness.
